Admittedly, I'm a bit of a cookbook addict, and a big fan of baking, and of cookies. I also have two kids that keep me busy, so recipes that promote quick and easy baking are always high on my list, as well as recipes my kids can help make.
Enter The Ultimate Cake Mix Cookie Book by Camilla Saulsbury, which just might be the cookbook of my dreams.
Featured in this cookbook are more than 375 recipes for cookies, all of which start with a simple box of cake mix. Combine that cake mix with a few other simple ingredients, and you'll discover a variety of shaped, dropped and bar cookies, in all sorts of amazing flavors.
Recipes are sorted by type of cookie, but the back index also groups them by cake mix type. This was perfect for my daughter and I as we perused the pantry, discovered a box of white cake mix where we were then able to decide what recipe we wanted to try. She chose a simple Butterscotch Cookie, which involved only 4 other ingredients, a great starter cookie that my 9-year-old sous chef can make with minimal help from mom. I thought the Lemon Blueberry cookies looked wonderful, as did the Bittersweet Chocolate Blackout Cookies, and the Tropical Pineapple and Caramel Bars, and the Chai Spice Cookies, and well, pretty much the whole book! There's even a Whole Wheat Pumpkin Breakfast Cookie!
My daughter is quite ready to try more cookies in the book. I am too, just as soon as we get a few more cake mixes!
The Ultimate Cake Mix Cookie Book is available on Amazon for $12.10.
