Friday Food News: Summer Cocktails from POM

I recently had a delicious lunch in NYC to celebrate the upcoming pomegranate season. Hosted by POM Wonderful, I had the opportunity to sample a variety of recipes using the tart, yet sweet pomegranates. Celebrity Chef and Cookbook Author Candice Kumai was also in attendance who spoke about how she loves using POM Wonderful in everything from salad dressings to her salmon. The dishes were enhanced with POM Wonderful that created a refreshing and unique way to enjoy meals like a POM Argula Salad, turkey sliders, POM Glazed Salmon and a Pomegranate Apple Crisp. On top of that pomegranates are packed with antioxidants, vitamin C, vitamin K, fiber and minerals that has been thriving in the hot days and cool nights of the San Joaquin Valley since it was brought there at the end of the 19th century.

To celebrate the summer, I have been loving the delicious and fun drinks from POM including their POMtini, POM Cosmo, and a POMOJITO that can add a nice zip your next summer party. Pair it with one of their many recipes ideas - some delicious options include Quinoa with Arils and Goat Cheese, POM Glazed Short Ribs and Butternut Squash Ravoli with POM Sauce (among many other). Fresh pomegranate season starts in October, but until then enjoy these refreshing and unique drinks over the summer.

POMTINI'?¢

1 oz. juice from POM Wonderful Pomegranates* or 1 oz. POM Wonderful 100% Pomegranate Juice
1-1/2 oz. vodka
1-1/2 oz. grapefruit juice
1/2 oz. sour mix OR 1/2 oz. freshly squeezed lime and 1/2 oz. simple syrup (equal parts sugar and cold water dissolved together)
orange peel for garnish

Directions:

  • Assemble all ingredients in bar or mixing glass.
  • Shake well with ice and strain into a chilled martini glass.
  • Garnish with orange peel.

* This cocktail can be made with freshly squeezed juice from a large POM Wonderful Pomegranate or by using POM Wonderful 100% Pomegranate Juice. To juice the pomegranate, cut it in half (as you would a grapefruit) and juice using a citrus reamer or juicer. Pour the mixture through a cheesecloth-lined strainer or sieve. One large POM Wonderful Pomegranate will produce about 1/2 cup of juice.

POM Cosmo

1-1/3 oz. juice from POM Wonderful Pomegranates* or 1-1/3 oz. POM Wonderful 100% Pomegranate Juice
1-3/4 oz. vodka
1/3 oz. orange liqueur
1/3 oz. fresh lime juice
twist of lime for garnish

Directions:

  • Pour ingredients into a shaker filled with ice.
  • Shake sharply and strain into glass.
  • Garnish with a twist of lime.

* This cocktail can be made with freshly squeezed juice from a large POM Wonderful Pomegranate or by using POM Wonderful 100% Pomegranate Juice. To juice the pomegranate, cut it in half (as you would a grapefruit) and juice using a citrus reamer or juicer. Pour the mixture through a cheesecloth-lined strainer or sieve. One large POM Wonderful Pomegranate will produce about 1/2 cup of juice.

POMOJITO

1 oz. juice from POM Wonderful Pomegranates* or 1 oz. POM Wonderful 100% Pomegranate Juice
1 oz. pomegranate liqueur
2 oz. vodka
soda
3 lime wedges
4 mint leaves
3 teaspoons brown sugar
mint sprig for garnish

Directions:
1. Muddle the lime wedges, mint leaves and brown sugar in a shaker glass.
2. Add vodka and pomegranate liqueur. Shake well with ice and pour into a highball glass.
3. Top up with pomegranate juice and a splash of soda. Garnish with the mint sprig.
