Cinnamon Spiced Apple Cake

After the turkey, the sweet potatoes and the cranberries, every good Thanksgiving table needs a few amazing desserts. Besides the classic pumpkin pie with whipped cream, the dessert options are endless. At my house, my husband's vote is always pecan pie, whereas I'm usually tempted by something with chocolate, and our oldest has to have lemon. This year, we're hoping to try something new to go along with our standby choices.

We've found the perfect recipe for Cinnamon Spiced Apple Cake, from Rachael Ray's Buddy and eHow Food dessert expert Heather Bertinetti. This simple recipe uses just a few basic ingredients like flour, eggs and oil, along with apples, raisins and cinnamon for an amazing fall flavor. It's quick to make and ideal for a side of vanilla ice cream!

Cinnamon Spiced Apple Cake
1 3/4 cups canola oil
3.5 eggs
1 tsp. vanilla extract
2.5 cups sugar
2 teaspoons ground cinnamon
1/2 teaspoon baking soda
4 cups all-purpose flour
4 large firm apples, such as Rome, Empire, or Granny Smith, peeled, seeded and diced (about 4 cups total)
1 3/4 cups golden raisins

Add canola oil, eggs and vanilla extract into one large bowl. Whisk together while adding the sugar. Stir until smooth.

In a separate bowl, add cinnamon, baking powder and flour. Slowly combine the dry ingredients into the other bowl, mixing until free of lumps.

Fold in the apples and golden raisins.

Pour the batter into a nonstick pan, smoothing the top with a spatula.

Pop into the oven at 350 degrees, and bake for about 30 minutes.
