With back to school in full swing, and all the busy evenings that come with it, we at Momtrends are rediscovering our love for the crock pot. And really, what's not to love about walking in the door at 6pm after sports practice or scouts and finding dinner ready, especially when it's a meal that usually involves several hours in the kitchen to create?
Our favorite crock pot roasted chicken is an effortless meal that is cooked all in one pot unless, of course, you just have to have stuffing with roast chicken. Either way it's a win-win dish that your whole family will love!
1 whole roasting chicken
1 head garlic
1 bag baby carrots
6-8 small potatoes
Poultry seasoning or spice blend
Layer baby carrots evenly across bottom of the crock pot.
Scrub potatoes and quarter them with peel on, spreading them around the edges, leaving room for the chicken to sit in the middle.
Rinse chicken and pat dry; empty cavity if necessary. Quarter onion and dice garlic, place both inside cavity, set in the crock pot resting on top of the carrots. If necessary, rearrange carrots/potatoes to ensure crock pot lid will seal.
Brush chicken with poultry seasoning or blend. (I typically use a homemade combination of dried herbs from my parents' garden, with basil, parsley, oregano and chives.)
Cook on low all day, for 8-10 hours, depending on crock pot settings.
Even better, our latest chicken yielded enough leftovers for Greek chicken salad sandwiches and a kettle of chicken soup.
