Saturday Sips: Fresh Summer Peach Cocktail
August is National Peach Month, but you already probably knew that from the sweet, rosy golden globes lining the farmer's market rows. Along with cold, ripe watermelon and sweet corn, there are few things that scream summer more than a delicious, juicy peach. While it would be a crime not to enjoy a few fresh on their own, chopped over ice cream or thrown into a salad with goat cheese, today we're whipping up a deliciously refreshing fresh summer peach cocktail - the Tabernacle Crush.
This summer peach cocktail is easy to make and there's a good chance you already have all the ingredients on hand. While this recipe serves one, it can easily be scaled up to make a pitcher. Just hold off on the ice and club soda and add those to the glasses individually.
Ingredients
- 1/2 large peach, sliced
- 5-6 small basil leaves, plus more for garnish
- 1/2 ounce fresh lemon juice
- 1 1/2 ounces gin
- 1 ounce Lillet
- 1/2 ounce simple syrup
- Ice
- Club soda
Directions
- In a highball glass, muddle together the peach slices with a few of the basil leaves and the lemon juice. Use an actual muddler like this or the back of a large spoon.
- Add the gin, Lillet and simple syrup. Add ice cubes and top with club soda. Garnish with basil sprig or peach slice if you want to get fancy.
