School is officially over so we're starting off the first weekend of summer with something that is super simple and pairs perfectly with sleeping in (hopefully the kids cooperate with that plan): mimosas. Who doesn't love a good mimosa? I always know it's going to be a good day when it begins with me sipping my favorite cocktail.
With only two ingredients and no measuring needed, mimosas are an easy way to celebrate (or mourn - depending on your mood) the arrival of summer. I'm sure I'm not the only mom who's both thrilled to welcome the magic that summer brings with it and a little stressed about the school year being over right?
While mimosas are traditionally made with Champagne, whatever kind of bubbly wine you have on hand will nicely pair whatever kind of citrus juice you have on hand. I'm a big fan of mixing up my mimosas with Prosecco for instance. And if you want to put a little twist on things, you could add grapefruit juice instead of orange juice. Just a thought!
- orange juice or other citrus juice
- Champagne, Prosecco or other bubbly wine
Mix equal parts orange juice and Champagne. Or err on the side of more OJ or more Champagne depending on how your morning's been so far. I'm sure you can guess which side I lean towards...More bubbly please!
