Sandpearl Resort Samoa Cheesecake with Girl Scout Cookies

This week, Girl Scouts across the country are celebrating the 100th birthday of Girl Scouting! To celebrate the arrival of the cookies, we've got a fun recipe to share: the Sandpearl Resort Samoa Cheesecake (and don't forget about our ideas for pairing wine with cookies)

But, even more fun, several resorts and restaurants are getting in on the birthday with lines of Girl Scout cookie themed desserts and drinks, including Sandpearl Resort in Clearwater Beach. In honor of Girl Scouting, Sandpearl is offering a "Thin Mintini" and "Sandpearl Samoa Cheesecake," as well as a Thin Mint Pedicure at the spa (treat yourself to a chocolate pedicure while munching on thin mints!).

If you can't make it to Florida, we have the next best thing for you--Sandpearl's recipe for Samoa cheesecake! Enjoy!

Sandpearl Samoa Cheesecake
2C Chopped Samoas
1/2C Butter, melted
24oz Softened Cream Cheese
1C Sugar
3 Eggs
8oz Sour Cream
2t. Coconut Extract
3C Sandpearl Caramel Sauce
Sandpearl Chocolate Sauce*

Preheat oven to 325 degrees.

Mix melted butter, chopped Samoas and press into bottom of prepared spring form pan.
Beat cream cheese until light and fluffy.
Gradually add the sugar until blended.
Add the eggs one at a time.
Stir in sour cream and coconut extract.
Beat in caramel sauce until completely incorporated.
Pour batter into crust.
Bake cheesecake for 1 hour 15 minutes then partially open oven door and turn oven off.
Let the cheesecake cool for 15 minutes more in the oven.
Run a knife around edges and let cheesecake cool on a wire rack for 8 hours in refrigerator.
Cut the cheesecake and drizzle with chocolate sauce.

Sandpearl Caramel Sauce

1 lbs Sugar
½ lbs Butter
1- 1/2C Cream


Boil Sugar with a little water to an amber color.
Slowly add heated cream and butter whisking constantly.
Let simmer for 3 minutes, cool completely.

Sandpearl Chocolate Sauce

½ lbs Butter
½ lbs Dark Chocolate
7 oz. Sugar
3 oz. Cocoa Powder
4 oz. Corn Syrup
2 oz. Coffee
Pinch of salt
11 oz. Heavy Cream


Melt butter and chocolate over a double boiler.
Add sugar and cocoa powder. Dissolve.
Add coffee, corn syrup and salt.
Remove from heat, whisk in heavy cream.
