I love cooking homemade food for my family, but the reality is sometimes I come home later than I would like or I'll have been out all day with the girls and the last thing I want to do is cook. I do, however, want them to eat healthy and that can be a challenge when faced with fast-food and pre-maid meal options.
During a recent webinar, I had the opportunity to learn more about a healthy alternative to homemade food with Kashi's new Steamed Meals. Featuring Kashi's signature 7 whole grains, the variety of meals allows for the same delicious taste that the brand is renowned for along with a unique, vibrant vegetables, from edamame and tomatoes to cannellini - that also include at least 35g of whole grains, 13g of protein and 4g of fiber per serving.
The new variety of Kashi Steam Meals includes a four different options such as a Chicken Fettuccine Steam Meal with white chicken, broccoli, mushrooms, tomatoes and zucchini; a Sesame Chicken Steam Meal with chicken, edamame, carrots, red pepper, and roasted green beans; a Spinach and Artichoke Pasta Steam Meal with spinach, artichokes, roasted red peppers and cannellini beans and a Roasted Garlic Chicken Farfalle Steam Meal with 7 Whole Grain Farfalle Pasta, white chicken, asparagus, spinach and roasted garlic, tomato, red wine and basil sauce.
During the webinar, I also heard from Chef Scott Campbell from NYC's New Leaf Restaurant who provided some amazing tips (see below) and recipes on how to create simple side. He suggests a seasonal focus for vegetables by grilling, steaming or roasting vegetables like carrots, zucchini or asparagus and using fresh herbs and micro greens will visually and flavorfully perk up your meal. He also said that simple salads work great as sides and that they can be brightened up with a vinaigrette.
He also shared some delicious healthy recipes to inspire the home cook and one of my favorites is a recipe using pears, brie and the side of the Kashi Chicken Fettuccine Steam Meal for a quick and easy protein-packed meal option.
Whether you need a break or are in a bind, the new Kashi Steam Meals are a great option to provide your kids with the nutrients and vitamins they need as well as the break you deserve.
Bosc Pear and Brie Cheese Salad with Kashi Chicken Fettuccine Steam Meal
Bosc Pears, Quartered and Seeded
Ounces Brie Cheese (to taste)
Tablespoon Sherry Vinegar (to taste)
Tablespoon Maple Syrup (to taste)
1 Ounce Extra Virgin Olive Oil (to taste)
1 Ounce Toasted Walnuts
Salt (to taste)
'Pepper (to taste)
Mix sherry vinegar, maple syrup and olive oil in a bowl, add pear quarters, season and toss in vinaigrette. Garnish pear mixture with Brie, toasted walnuts and chervil sprigs
