When it comes to feeding my family I'm all about moderation. I have no issue with them enjoying a nice juicy burger every now and again, but it's important to me that they eat their fair share of meat-free dishes as well. So, meat free Monday has always been a favorite of mine. It's the perfect opportunity to work meat free options into your menu at least once a week. And with today being World Meat Free Day, I thought I would share some of my favorite meat free recipes!
Cheese Tortellini with Pesto...Pasta is always an easy meat free option. Not only can you whip up a pasta dish super quick, but they're usually a hit with the whole family. Plus, they're nice and hearty.
Roasted Cauliflower Soup...You probably don't typically turn to soup during the summer, but if you offset the heat with a crisp, cool salad I think it works. Plus, if you pick a recipe as easy as this one, dinner time will be much less stressful. And the leftovers keep like a dream!
Cold Vegetable Pizza...Now if there was ever a way to get your kids to eat their vegetables it's by putting it on pizza. This cold pizza recipe from Dear Crissy would make for a perfect summer meal!
