reduced calorie meatloaf

One of my resolutions is to get cooking! Trying new recipes and cutting down on sugar are big priorities in our house. Using Truvia® natural sweetener is just one small way that I am keeping my eye on making smart choices for my meals.

When it comes to meal planning, I'm focusing on rich flavors to mask the fact that I am cutting down on sugar, fat and carbs, For dinner, we are eating more lean meat, paired with vegetables. That means we need big flavor in what I whip up for our family.

healthy cooking tips

Tip: Follow the "Red, Green and Orange Rule." At each of our meals, we try to include either a red, green or orange fruit or vegetable. This way we fill up on nutrient-, antioxidant-, and fiber-rich foods that are an important part of our balanced diet.

Here's one of my new favorite recipes from the Truvia® brand site: Meatloaf with Truvía® Natural Sweetener

Truvía® natural sweetener puts a new spin on meatloaf by pairing lemon and subtle sweetness with savory beef and green pepper under a flavorful sauce. This meatloaf has 45% fewer calories and 85% less sugar than the full-sugar version. 10 servings (5 oz. each) with 150 calories each.

meatloaf recipes

Ingredients: MEATLOAF
1?2 lb. ground sirloin
1?2 lb. ground chuck (note: I used a very lean ground beef)
2 garlic cloves, smashed and chopped
1?2 chopped onion
1?2 chopped celery
1 tsp chili pepper
1?2 cup chopped bell pepper
2 eggs, lightly beaten
2 Tbsp Truvía® natural sweetener spoonable*
1 lemon, zested
8 oz. canned, diced tomatoes with juice
1?2 cup ground bran flakes, ground
1?2 tsp cracked black pepper

SAUCE
1?2 cup ketchup
1?2 cup canned tomatoes, puréed
1 tsp cumin
1?2 cup Truvía® natural sweetener, spoonable
Dash of worchester sauce
1 Tbsp prepared mustard

Directions:

  • Preheat oven to 375° F.
  • Mix all loaf ingredients well and place in a baking dish. Shape into a loaf.
  • Mix ingredients for sauce and spread on top of loaf. Bake for 1 hour.

And here's one last tip: Focus on quality carbohydrates like sweet potato, butternut squash, spaghetti squash, beans or oatmeal. Both your brain and muscles will be fueled appropriately to help stave off cravings and squash hunger. As an added bonus, veggies have their own specific health- and beauty-related benefits, such as fennel and artichokes for beating bloat, squash and green beans for fighting stress, tomatoes and cucumbers for improving skin tone and carrots and beans for fighting cancer, etc.
