My sister makes a mean key lime pie with a graham cracker crust. It's one of my favorite summer desserts because of the sweet, tart, tangy and refreshing filling. But the truth is: it'd be nothing without that amazing buttery bottom layer. Rather than buying a store-bought pie shell, she makes it herself, simply by finely crushing graham crackers and combining with hot, melting butter. Once hardened, I could eat that glazed cookie like candy--no filling necessary.

Yes, butter does make everything better, but graham crackers are still pretty nifty on their own. They are a vehicle for many delicious desserts--including the beloved s'more. (If you haven't yet checked out our camping birthday party theme, head on over HERE.)

Summer is all about easy, breezy desserts, and these graham cracker recipes are perfect for picnics and BBQs. To celebrate National Graham Cracker Day, I have rounded up a few fun recipes worthy of your next casual outdoor affair. Who knew graham crackers were so versatile?
