Memorial Day weekend has come and gone--and that means the official start to summer is right around the corner. The temperature will continue to climb, the sun will shine even brighter, and epic barbecue meals are coming to a backyard near you!

I love grilling. Whether we're talking big Sunday cookouts or mid-week dinners, I don't discriminate. I prefer to keep the indoor oven and stove off during the warmer months, and like to make most of our family meals on the barbie. Still, we're a busy gang--even during the so-called "laid-back" summertime--so I try to minimize effort and mess; that's why I'm a big fan of foil-packet meals. Throw a protein and some veggies in aluminum foil, put them on the grill, and you have yourself a contained meal in minutes. No clean-up required!
