The weekends are all about family time, and after a long and busy day the last thing I want to do is cook an intricate dinner. Last weekend we spent some time away in upstate New York, and while the trip was amazing, the 'what are we going to have for dinner' was looming in my mind.
Pizza is always a hit my daughters, so on the way home we stopped at a Walmart to get the fixings for our simple and tasty dinner. Instead of traditional pizza dough, I opted for Flatout Flatbread, a thin crust of flatbreads featuring flavors like Rosemary & Olive Oil, Spicy Italian, Rustic White, Heritage Wheat as well as various other varieties and flavors. I knew I wanted a healthier one so I bought some spinach, pesto, and peppers for one type of pizza, and a traditional sauce and cheese for another. I used the Rustic White for the kids and the Spicy Italian for the adults. We also purchased ingredients for a salad and were off with no stress of the impending dinner time that awaited us.
When we returned home, my younger daughter and I put on some Flatout Flatbread aprons and went to work. The beauty of making these types of pizzas was that there really wasn't much work involved. All we had to do was place the ingredients on and cook the pizza in the oven. I placed 4 pieces of flatbread on my oven grill and literally within 6 minutes dinner was done (see recipe below for traditional pizza recipe).
Personally, I loved the thin crust that had a nice amount of crunch from the oven. The ingredients melted well and it wasn't heavy thanks to the light crust. The kids, of course, loved everything about their mini pizzas and asked for more until we were completely done.
As a busy mom, weekends are a great way to regroup, relax, and enjoy as much time as we can together. I want dinner to be easy, fun, and healthy and with options from Flatout Flatbread I can know make dinner quicker as well as getting my girls involved since it really is so easy.

1 Flatout® Thin Crust Flatbread Spicy Italian
½ Medium Tomato Sliced
2 Tbsp. Balsamic Vinaigrette dressing
1/2 cup shredded mozzarella
6 Small fresh Basil leaves
Preheat grill to 350°F. Pre-bake the flatbread on the grill for 1-2 minutes. Remove flatbread from grill. Top with cheese, tomato and basil. Return flatbread. Close lid. Grill for 4 minutes.
Oven Method: Place Flatout Flatbread on a cookie sheet. Bake at 350 for two minutes. Remove and top with cheese, tomato and basil. Bake at 350 for four minutes. Remove from oven. Drizzle with Balsamic.
