Sweet and Sour Chicken-rewritten from Cooking Light Slow Cooker Tonight! Cookbook
Yield: 6 Servings (serving size:2/3 cup chicken mixture and 1/2 cup rice)
1 cup chopped onion (1 medium)
1/3 cup sugar (we choose to use 1/4 cup and it tastes delish!)
1/3 cup ketchup
1/4 cup orange juice
3 TBS. cornstarch
2 TBS. lower-sodium soy sauce
1 TBS grated peeled fresh ginger
1 lb. skinless, boneless chicken thighs, cut into 1-inch pieces (we substitute chicken breast)
2 (8 oz.) cans pineapple chunks in juice, drained
1 large green bell pepper, cut into 3/4 inch pieces
1 large red bell pepper, cut into 3/4 inch pieces
3 cups hot cooked rice
1. Combine first 12 ingredients in an electric slow cooker. Cover and cook on LOW for 6 hours or HIGH for 4 hours. Serve over rice.
