Friday Feasts: Summer Squash

Loaded with vitamin A and some C, squash is ubiquitous this time of year. I find the mellow yellow veggie easy to serve to kids and a wonderful accompaniment to grilled meats and fish. Since our local markets are overflowing with these yellow beauties. I though I would share my classic summer squash recipe. And you can find out more about squash here.

2 medium sized squash cleaned an cut into 1/4" half moon shapes.
2 scallions chopped thin
3 tbsp olive oil
salt and pepper to taste

Heat the oil to medium. Add the scallions. Saute for a couple minutes. Add the squash. Mix frequently and toss in spices. Cook until squash is semi-firm (do not make mushy). I'd love to know what you've been up to with your summer vegetables.
