Friday Feasts: Poached Salmon

We're always looking for alternatives to cooking with butter and oil. I went hunting for a good recipe for poached fish which led me to I didn't find exactly what I was looking for but close. We had some gorgeous Arctic Char and I was ready to try something new.

Two Arctic Char Steaks
1/2 cup white wine
1/2 cup water
2 tsp fresh parsley
1 clove garlic
salt & pepper

  • Heat wine and water over medium high heat in a deep non stick pot for 5 minutes.
  • On a spatula, slide fish into poaching liquid.
  • Sprinkle the top of the fish with parsley, garlic and salt and pepper
  • Poach until fish is firm-about 10 minutes.

This was a nice treat and I look forward to trying it with salmon soon. I think my waistline will be happy with the reductions of fat and oils. I can't wait to see what you've been up to!
