This was a week of indulgence at the Atlantis Resort in the Bahamas. When I got back I seriously craved greens and lots of them. So this week I am sharing my slim down dinner. Whenever I feel I've gone overboard with treats (see the cupcake tower in the next picture), I balance it out with a few meals like this one.
I start with sauteed spinach. We all know dark leafy greens are the best for us. I make mine with olive oil and a sprinkle of Parmesan cheese. Simply sautee on a low heat in oil until spinach wilts and then add the cheese. I'm nuts about tomatoes and the natural sweetness of these grape tomatoes is irresistible. Then for the protein I go for smoked salmon. It is fatty to be sure, but the best fat rich in Omega 3's. After a few of these meals I feel back in balance.
