Super Simple Spring Dinner Recipe

Do you ever happen to look at the calendar and realize that it's been a really long time since you penciled in some serious quality time with your honey? Let's just say that between work, school, baseball, dance and all the curve balls life's been throwing at us lately, it's been way too long since the hub and I focused on some "us" time. So, being that we just road tripped to our home away from home in the Blue Ridge Mountains for our spring break vacation, I thought it would be the perfect time to celebrate. Celebrate what you ask? I decided to simply celebrate us. That's all! No big, fancy occasion. In fact, it's just a Monday night. Isn't every day you're alive a great day to celebrate though? And that's how I landed on the super simple spring dinner recipe I'm sharing today! But first, let's talk logistics...

When we were on one of our many Walmart shopping trips, which are, frankly, nearly daily when we're here in our beloved mountain town, I decided to grab a Bertolli Frozen Chicken Florentine meal. They're conveniently located in the frozen foods department, and as you can see, a total steal. While I was fully committed to the couple quality time idea, I knew that after a long day of sight seeing, we would be pretty beat after finally getting the little ones to bed. So, an easy to prepare frozen dish was just the ticket. And I instantly knew exactly what I would pair the Chicken Florentine with A crisp salad and my spring vinaigrette were made to go with this tasty pasta dish. On a side, note the Bertolli Frozen Chicken Florentine also comes in family size, so you could easily make this meal on a larger scale too. But, I digress...Let's talk ambiance.

Along with the meal fixins' I grabbed some fresh tulips to decorate with. What says spring more than tulips?! Not much. Those beautiful blooms were just lovely with my spring-ready green linens, don't you think? As you can see, it was a casual kind of affair, so simple lantern candleholders and everyday glassware, that served as wine glasses, were right at home.

Let's get back to the food shall we? Our delicious meal consisted of Farfalle pasta that cooked up to a delightful al dente. The grilled white meat chicken and spinach was prepared in a decadent sauce made with white wine and, my favorite part, Parmesan and Romano cheeses. It's literally freeze, to skillet, then your table. No joke. To go with it we whipped up a fresh salad complete with spring mix greens, cucumber, carrot, cherry tomatoes and the spring vinaigrette I mentioned. Don't worry. I'll drop that choice little spring dinner recipe below. Now as far as our beverages go, I fully recognize that white wine would have paired better with our spring meal, but the hubs and I are red wine people, so red is what we had. Hey, it was our night right? Haha!

Spring Vinaigrette Recipe


1/2 cup olive oil
1/8 cup balsamic vinegar
1/8 cup mandarin juice
1 tsp dijon mustard


Whisk the ingredients together and serve! Easy peasy!
