Recipes with Iced Coffee
Now that it's summer, I've switched over to drinking iced coffee. A perfect way to cool down, while also getting a jolt of java I have also been experimenting with coffee by using International Delight in a variety of recipes including the moist and rich Mocha Chip Muffins that can be paired with an Iced Coffee Frappe that is reminiscent of a delicious coffeehouse treat.
The line also includes some ice coffee flavors to mix up your recipes like hazelnut, french vanilla, carmel machiatto, white chocolate mocha and seasonal favorites to enhance your recipes and your morning rountine. Mocha Chip Muffins
1 ¾ cup flour
2 tsp baking powder
½ tsp baking soda
½ tsp salt
¾ cup sugar
1 cup semi-sweet chocolate chips
1 cup International Delight Mocha Iced Coffee
1/3 cup vegetable oil
1 tsp instant coffee
2 tsp vanilla extract
Preheat oven to 400 degrees. Line a 12-cup muffin tin with paper liners. Whisk together dry ingredients in a large bowl. Stir in chocolate chips. In a separate bowl, whisk together remaining ingredients, stirring until coffee is dissolved. Add Iced Coffee mixture to flour mixture, stirring just until incorporated. Fill each muffin cup ¾ full. Bake for 18-20 minutes until tops spring back. Cool on a rack for 10 minutes, then remove from pan. Yield: 12 muffins
Iced Coffee Frappe
1 cup International Delight Iced Coffee, any flavor
½ cup ice
½ cup vanilla, coffee or chocolate ice cream
½ tsp. vanilla extract
Combine all ingredients in a blender and blend until thick and smooth. Yield: 1 serving
