Organic Sliced Cheese


Kids sure love their cheese. If there is one go-to food that my daughter will never turn down it's organic sliced cheese. The problem is cheese, especially sliced cheese, is processed, which according to a 2011 Wisconsin Milk Marketing Board Cheese Consumption Data, the, American Single Slice, is the number one selling cheese in the U.S., with more than 300 million pounds of individually wrapped American Pasteurized Processed Cheese Food sold in 2010.

Grilled Cheese with Cilantro Chipotle Pesto & Black Bean Spread

Cook time: 5 minutes
Note: Recipe makes enough pesto and black bean spread for multiple sandwiches.

1/4 c. toasted pumpkin seeds
2 tsp. canned chipotle in adobe sauce chopped
1/4 c. Organic Valley Grated Parmesan
2 cloves garlic
1 bunch fresh cilantro (or 4-5 cups loosely packed)
1 tsp. honey
1 tbsp. lemon juice
1/2 tsp. salt
1/2 tsp. black pepper
1/2 c. olive oil

In a food processor combine the pumpkin seeds, chipotle, parmesan, and garlic. Process for 15 seconds. Add the cilantro, salt, pepper, lemon juice, and honey. With the processor running, slowly add the olive oil until the pesto is fully pureed. Remove pesto from food processor and set aside or refrigerate until ready to use.

Black Bean Spread:
1 can black beans drained
2 tbsp. lime juice
1 tsp. ground coriander
1 tsp. ground cumin
2 tsp. salt
2 tsp. black pepper
Water as needed

In a food processor combine the black beans, lime juice, coriander, cumin, salt, and black pepper. Process until smooth. Slowly add water as needed to reach a spreadable consistency. Remove spread from food processor and set aside or refrigerate until ready to use.

2 slices organic sourdough bread
2-4 tbsp. pesto
2-4 tbsp. black bean spread
1-2 slices Organic Valley American Cheese Singles
2 tsp. Organic Valley Cultured Butter

Spread pesto on the inside of one slice of bread and top with the Organic Valley American Cheese Singles. Spread black bean spread on the inside of the other slice and place bean-side down on top of the other slice. Melt butter in a skillet over medium heat. Grill sandwich in skillet until browned on both sides and cheese is melted. Cut and serve immediately.

Organic Valley American Singles have a suggested retail price of $5.69 and will be available in supermarkets, natural foods stores and food cooperatives across the country in June 2012.
