While attending the Jelly Belly Cupcake Editor Night Out at Dylan's Candy Bar, my girls and I had the opportunity to work with authors Karen Tack and Alan Richardson to replicate some of their latest cupcake ideas using Jelly Belly's amazing collection of colorful jelly beans. At this fun event, they showed us step-by-step how to make some of the cutest spring cupcakes imaginable including ideas for the Easter holiday using Jelly Belly jelly beans.

In the book, Cupcakes, Cookies & Pies Oh My spring cupcakes (and more!) come to life as Karen and Alan showcase the cutest finished projects that include refrigerator cookies, pound cakes, pie dough, cheesecakes, bar cookies, and Jell-O! Along with a user-friendly guide, the book is an excellent way to create desserts in an innovative way as well as have fun with your kids in the kitchen.

Karen and Alan love to take candy, cookies and snacks and bring them together in desserts. Alan shared "Candy has shape texture and color. Unlock its potential." Alan loves to keep his candy designs simple. Karen says, "More frosting, more candy, more fun!"

The Secrets to Cupcake Decorating
In addition to showing us cute cupcake designs that will knock your guests socks off this Easter, they also shared their cupcake secrets:
- It is easier to frost a firmer cupcake, so put it in the freezer.
- Use canned frosting when decorating. It is thick and will support the candy designs.
- Spin cupcake around while spreading frosting.
- No need to purchase a piping bag or other fancy pastry tools. Use a freezer bags and snip the corner.
Jelly Belly was our host for the evening and we were delighted with all Jelly Belly licensed products. Pencils, shower gels and iPhone covers are some of the fun Jelly Belly products that are currently available. This is, of course, in addition to the their delicious collection of jelly beans!
An event filled with delicious treats was special to share with my kids as we learned how to decorate and create special cupcakes for any occasion.
