Friday Food: Mango Madness

I wish I could say all my efforts in the kitchen paid off. Sadly this one was a complete bust with the kids, but a hit with the grown-ups. I tore the a "Mango Madness" recipe out of the pages of Parents February issue. The girls have been in a food rut, and I wanted to attempt to liven things up. What could be better than a sweet mango dip? Complete revolt.

They wouldn't even try a bite (they did eat the Lundberg Rice Chips without complaint). Since we don't waste food around here, I decided to use the dip for a grown-up dinner. We tossed the Mango topping over sauteed shrimp and it was delightful. An easy, fresh, low fat dinner for two. Thanks kids!

Mango Madness (from Parents Magazine)
Ingredients
2 cups chopped mango
1/2 cup finely chopped red pepper
1/4 cup finely chopped red onion
2 tsp chopped cilatntro
2 tsp lime juice
pinch of salt & pepper

Combine above in a bowl and serve as a dip with chips...or not. I used defrosted frozen shrimp and quickly sauteed it in sesame oil on a medium high heat. I hope you had better luck tempting tummies this week.
