Friday Feasts: Quinoa Salad

I'm posting my review of a new nutrition book called Expect the Best later today. Here is a recipe from the book that I want to share for Friday Feasts:

Quinoa Salad
2 cups chicken or vegetable broth or stock
1 cup uncooked quinoa
3/4 cup chopped dried apricots
1/2 cup chopped pecans
1/4 cup sliced scallions
2 tablespoons olive oil
3 tablespoons balsamic vinegar

1. In a medium saucepan bring the broth to a boil. Add quinoa to the pan and cover. Reduce heart to low and allow quinoa to simmer for about 20 minutes or until the liquid has been absorbed. Remove from heat and allow to cool.
2. In a medium bowl combine apricots, pecans and scallions.
3. In a small bowl add the oil and vinegar and whisk until will mixed.
4. Mix cooled quinoa in the the medium bowl. Add the dressing. Mix well and refrigerate at least 20 minutes before serving.

Quinoa is a grain that is rich in protein, iron and fiber--I'm looking forward to making this and will add a photo soon.
