Friday Feasts: Lobster Salad


We've been eating like kings this vacation. Loads of seafood. I saved the claws and bodies from our New England lobster boil (we ate the tails with steamed clams and boiled red potatoes) a few days ago and today I whipped up lobster salad. Sadly, I forgot to snap a picture until the near end of lunch today. You'll need the claws and bodies of at least three lobsters to make lunch for three.

  • 2 cups lobster meat broken into small pieces.
  • 1/2 cup diced celery
  • 1/4 cup minced onion
  • 1/4 mayo
  • 1/4 tsp. tarragon
  • pinch of salt and pepper

Simply mix all the above ingredients in a large bowl. The traditional method is to serve the salad on a hot dog roll, but we go the healthier route and serve over mixed greens with sliced tomatoes. Yum!
