Friday Feasts: Baked Flounder

We're eating lighter as the hazy days of summer have arrived. That means lots of fish and plenty of salads. This week we had slim picking in the fridge, but I had just been to the seafood store to pick up some tasty-looking flounder fillets. So we got a little creative.

Ingredients:
2 flounder fillets
1 tsp tarragon
3 tsp white wine
1/2 tsp salt
1 clove minced garlic
2 tsp olive oil
1 fresh lemon sliced

Combine tarragon, wine, salt, garlic and olive oil in a small bowl. Pour this mix over cleaned and dried flounder. Top with lemon slices. Bake for 15 minutes at 375.

This is mouth watering good and can be tossed on the grill in a foil packet too. Very light and flavorful. I suggest serving with a green salad and maybe a baked potato. Enjoy! And don't forget to link up with your efforts.
