As a working mom, I'??m often on the look-out for quick recipes to whip up for my family vs. resorting to carry-out or pre-packaged dinners.
There are lots of resources out there, so I'??ve got that pretty much down to a science. Walk in the door, start the skillet, boil the water. In the door by 6:00, dinner on the table by 6:30. Then there are the weekend events, the work group lunches, the church activities, that require a dish. This one is not as easy for me. I want something I can prepare early, doesn'??t need reheating, affordable, quick and of course, tasty! Here'??s my go-to recipe when called upon to feed:
Zesty Tortilla Bites
2 Packages 8 oz Philadelphia cream cheese
1 Can 6 oz black olives (pre-chopped)
1 small can green chiles (pre-chopped, drained)
1 small jar pimentos (optional, pre-chopped)
1 pkg ranch dressing mix
1/4 cup green onions (finely chopped)

10 10" flour tortillas
Directions: Combine first six items in a bowl, stir until thoroughly mixed. Spread a thin layer of the mixture on each tortilla. Starting at one end, gently roll tortilla into a tight tube. Wrap with plastic wrap and chill until ready to serve. To serve, slice into 1 inch slices. Serve slices on their side. Makes approx 100 pieces (enough to take and enough to keep!)
