Have you ever had the pleasure of visiting a winery?
I recently took a trip to California where I went on a private tour of the very lovely Sunstone Winery in Santa Ynez.
Besides having the opportunity to learn all about the beautiful vineyards and the various types of wines they create at the winery, one of the most interesting things that I learned was best pairings for wine and food.
Now, there are definitely certain types of wines that pair better with particular foods, but I learned how to create a dish, right at the winery, that can be paired with all different varietals of wine: as Rosé, Chardonnay, Cabernet and more. This way you can really surprise your family and friends by pretending to be a complete wine-and-food-pairing connoisseur.
The simple recipe that I want to share with you is for a delicious risotto.
Tip: You can even include some wine within this dish while you are cooking it if you choose. Add a little add a time, to taste!
Pair Your Wine With This Simple and Delicious Risotto Recipe
1. Drizzle a little extra virgin olive oil in a pan over medium heat and saute a teaspoon of minced garlic.
2. Chop up one zucchini, half of a red bell pepper, half of an onion and add it to the pan to continue sautéing.
3. Add 3/4 of a cup of chicken stock and bring the mixture to a boil.
4. Add one cup of rice (Arborio rice is an Italian short grain rice which is great for making risotto). Keep stirring the mixture as it boils.
5. After the rice has softened add in 1/4 cup of Parmesan cheese (or more to your taste preference).
6. Keep stirring over medium-high heat until some of the liquid has evaporated.
7. Right before you serve the risotto, top with some fresh herbs such as parsley, thyme and chives.
8. Before you eat your simple and delicious risotto pair it with your favorite wine. (I choose a lovely Rosé from Sunstone Winery while my friend paired hers with a full bodied Chardonnay.) The rosé is crisp and bright with fruity flavors, including hints of cherries, raspberries, strawberries, melon, apples and pears. A slight peppery undertone gives it an edge that’s both delightful and delicious, and the bright acidic finish pack a perfectly refreshing punch.
