I’ve mentioned my love of cooking with my daughter, and a few weeks ago I had the chance to cook with my friend Tiffany’s adorable kids Tristan & Tyler. These two dynamic personalities have been interviewing celebs, cooking and taking NYC by storm through their fun series “Tristin and Tyler’s Tales from the City!”
In the food segment, “Cooking with Tristin and Tyler,” we not only came together to create a delicious granola (see video below), but also to raise awareness for Share Our Strength’s No Kid Hungry 2 campaign which is working to end childhood hunger. We wore orange for the occasion and the boys shared tips at the end of video on how everyone – no matter what age – can get involved.
I choose this granola since I think its a great meet-kids-in-the-middle snack that combines a little bit of sweetness with dark chocolate and health properties thanks to the almond butter and oats.
Enjoy this simple and fun recipe with your kids and get active in the kitchen!
Nutty Chocolate Granola Bars
- 2 cups crushed almonds (you can also use cashews, peanuts, etc).
- 1/2 cup salted almonds
- 1 cup of almond butter
- 1 cup of coconut spread
- 1/4 cup of cranberries (or raisins)
- 2 cups quick oats
- 2 cups brown rice crisp cereal
- 1/2 cup maple syrup
- 1/2 tsp cinnamon
- 1/4 cup dark chocolate chips
- 1 tsp almond extract
- pinch of salt
- Preheat the oven to 350 degrees. Lay out the almonds and cashews on a cutting board and crush them with a rolling pin. Place them in a baking tray and let them toast for 10 minutes.
- As the nuts are cooking, combine the oats and cereal into a mixing bowl.
- Check on the nuts. Turn off the oven and let them cool.
- In a pan, heat the syrup, almond extract, peanut butter and coconut spread on a very low heat. Stir the mixture. After 3 minutes, add this mixture to the oats bowl along with the nuts. Stir. Add the cranberries and the chocolate chips.
- In a baking tray, add the mixture. Spread it out evenly and refrigerate it so that the bars can cool. (This also makes them easier to cut.)
