Ginger Turkey with Lettuce Wrap
Busy moms love single pan meals–and this Ginger Turkey with Lettuce Wrap certainly qualifies. It delivers big taste and looks divine with just a little prep work. The ground turkey mix is equally wonderful hot or cold so this is perfect for an outdoor meal.

Ginger Turkey with Lettuce Wrap Recipe

1 lb ground turkey
3 tbs. soy sauce (I use low sodium)
1 tbs.. fresh ginger
1 tsp. sugar
1/4 tsp. red pepper
1 garlic clove crushed
2 medium celery stalks, diced
1/2 cup diced water chestnuts
1/4 smashed cashews
1 head of Boston or bib lettuce

Start by cleaning and separating the lettuce leave. You want them to be nice and dry when the meal is ready.

Now it is time to make the sauce. Combine the soy sauce, ginger, sugar, red pepper and garlic in a small bowl. Whisk until well mixed. Set aside.

Next brown the ground turkey in a wok or skillet. Cook about 5 minutes or until the meat is no longer pink. Add celery and cook for another 2 minutes–keep stirring. Add water chestnuts and sauce cook for another minute–keep stirring. Remove from stove and mix in cashews.

Serve in a bowl with lettuce leaves on the side. What have you been up to in the kitchen?

    You do a great job inviting people to link up with Friday Feasts, but I have a suggestion for you: I usually like to be able to link into a carnival the evening before it's scheduled, or at least in the early a.m. before the kiddos are up. Yours wasn't up by 8:30 a.m., so now when I link up at night, it's too late for me to get any good hits from your site, and thus less worth my time. Maybe post on Thursday nights? Just a thought!
