When it comes to feeding my family I’m all about moderation. I have no issue with them enjoying a nice juicy burger every now and again, but it’s important to me that they eat their fair share of meat-free dishes as well. So, meat free Monday has always been a favorite of mine. It’s the perfect opportunity to work meat free options into your menu at least once a week. And with today being World Meat Free Day, I thought I would share some of my favorite meat free recipes!
Cheese Tortellini with Pesto…Pasta is always an easy meat free option. Not only can you whip up a pasta dish super quick, but they’re usually a hit with the whole family. Plus, they’re nice and hearty.
Roasted Cauliflower Soup…You probably don’t typically turn to soup during the summer, but if you offset the heat with a crisp, cool salad I think it works. Plus, if you pick a recipe as easy as this one, dinner time will be much less stressful. And the leftovers keep like a dream!
Cold Vegetable Pizza…Now if there was ever a way to get your kids to eat their vegetables it’s by putting it on pizza. This cold pizza recipe from Dear Crissy would make for a perfect summer meal!
Broccoli Cranberry Salad…If you’re looking for a lighter version of a classic pot luck dish, this salad from Mom Endeavors is it. Thanks to ingredients like fresh veggies and Greek yogurt, you can feel good about bringing this meat free dish to your next summer get together!
Momtrends posted a family favorite–a cheesy, yummy quiche. You can use just about any veggies you’ve got in your fridge. Check out our broccoli cheese quiche recipe here. The prep just takes a few minutes then pop it in the oven, add some greens and dinner is done.
