A few days ago, I had the pleasure of enjoying a luncheon hosted by Eggland’s Best and Candice Kumai in celebration of her new cookbook, Cook Yourself Sexy. As big fans of her first cookbook, Pretty Delicious (check our our recipe recap here), I was excited to chat with Candice and learn more about her new book.
Held at the Bryant Park Grill, the event was also a celebration of eggs where I enjoyed recipes straight from Candice’s new cookbook such as So Cali Nicoise Salad, Pouched Egg Over Mushroom Spinach & Potato, Sun-Dried Tomato and Mushroom Fritta, Hangover Breakfast Burrito and delicious desserts like Cherry-Pistachio Clafoutis, Strawberry Cupcakes and Creme Brulee was the perfect way to learn more about the book as well as the importance of lean protein like eggs.
In addition to the amazing food, Candice, our charming hostess spoke about the role of eggs in our diets, and specifically how Eggland’s Best eggs contain less saturated fat as well as double the Omega 3s, and offer ten times more Vitamin E than regular eggs. This is very important, specifically for Breast Cancer Awareness month, where Americans should minimize consumption of red and processed meats and opt for lean proteins (eggs, chicken, fish, etc.).
To support the cause, Eggland’s is going pink that will feature a pink ‘EB’ stamp alongside the signature Susan G. Komen for the Cure Running Ribbon to help remind consumers that a healthy lifestyle can play a key role in breast cancer prevention.
As a lean protein, eggs can be a part of an overall healthy lifestyle that Candice highlights in her book can be enjoyed in traditional omelettes, salads, frittatas, burritos, on burgers and as deviled eggs.
‘Eggs are one of my favorite ‘foods with benefits’ and is a popular ingredient found in my new cookbook, Cook Yourself Sexy,’ says Candice Kumai, chef and cookbook author. ‘I personally love using Eggland’s Best eggs in my recipes because I know I am getting a nutritionally superior egg that is packed with double the amount of Vitamin D, two times the amount of omega-3s and 10 times the amount of Vitamin E when compared to regular eggs.’
In addition, Candice spoke about her new book and emphasized the importance of eating real food and getting away from processed foods that will make your feel healthy and sexy – from both inside and out. I loved her stance on using whole-food ingredients in her food as well as focusing on taste and quality so that people can enjoy food again!

SO CALI NICOISE SALAD (Serving Size: 4)
- 2 Eggland’s Best eggs
- 1 large bunch arugula, washed and dried
- 1/2 cup canned kidney beans, rinsed and drained
- 2 tablespoons capers, whole
- 1/4 cup NiÃ§oise olives, whole
- 1/2 red onion, thinly sliced
- 1 avocado, thinly sliced
- 1- 5 oz can water-packed albacore tuna, drained
- 2 tablespoons balsamic vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon agave nectar
- 2 tablespoons extra virgin olive oil
- 1/2 teaspoon sea salt
TO MAKE THE SALAD
1 If using eggs, in a medium saucepan, cover the eggs with water and bring to a boil over medium-high heat. Cover the pan; turn off the heat, and let sit for 10 minutes. Place the eggs in a large bowl of cold water until they cool completely and can be peeled, about 6 minutes. Peel, thinly slice, and reserve.
2 Divide the arugula among 4 salad bowls. Top each serving with kidney beans, capers, olives, onion, avocado, tuna, and egg.
TO MAKE THE VINAIGRETTE
In a small bowl, whisk together the vinegar, mustard, agave, olive oil, and 1/2 teaspoon salt together. Drizzle the vinaigrette over the salads and serve stylishly!
