Many people wouldn’t correlate tofu as being an ingredient to be used in a dessert. I wouldn’t either but a recipe from House Foods struck me when I was testing out some of their tofu. An acquired food (and taste for some), I have always loved tofu bit generally had it in a teriyaki-type dish and never as a dessert. Since my whole family has a sweet tooth, I thought it would be interesting to test out the House Foods Chocolate Mousse as a sweet/semi-healthy dessert. The tofu served as an alternative to heavy cream, but still delivered a smooth and indulgent flavor.
Using simple ingredients (tofu, chocolate chips, vanilla, coconut milk, and cinnamon), I blended the tofu, warmed up the chocolate, stirred it all together and within minutes the tofu became a chocolatey concoction. Up next was chilling it in the fridge (you can serve immediately if you want it to be more like a pudding) and the mousse was ready. The family had no idea that I used tofu, and although I’m not a sneaking veggies, etc into food, I did think it was hysterical that my chocolate-loving/picky husband devoured the mousse with no complaints. Dessert has it’s place and this easy recipe using tofu makes it just (a little bit) healthier.

Whether you are serving chocolate mousse, soup, sandwiches or salad, tofu is a great option for kids and one that can really pack a punch in flavor and texture.
House Foods Chocolate Mousse
1 package 14 oz. House Foods Soft Tofu
¾ cup of semi-sweet chocolate chips
¼ cup of milk (can substitute coconut milk)
½ tbsp. vanilla
1½ tsp. ground cinnamon
1 tsp. ground cardamom (optional)
Open the tofu package and strain water. Remove tofu from package and blend in blender until smooth.
With the stove on low or simmer, melt the chocolate-chips and milk in a pot stirring until smooth. Add in tofu mixture and stir until it is blended evenly with the chocolate. Stir in vanilla, cinnamon (and cardamom ‘ optional).
Quickly remove from heat, cool and set in fridge until becomes thick like a mousse. Prefer a pudding to a mousse? If so, serve immediately after it has had a chance to cool out of the fridge.
