I love salads, but after awhile the same combination can get pretty dull. To mix it up I like to switch up the ingredients and types of lettuce I use as well as change my salad dressing. The beauty of salads is that they can always be diverse and unique – fitting to everyone’s personality’s and taste preferences. I recently learned more about salads, and even about a salad community at a luncheon hosted by Dole. In attendance was Felicity Huffman, Emmy-award winning actress, star of Desperate Housewives and mother of two. Felicity spoke about her love of salads, and how they helped her to lose weight without sacrificing taste during her stint on the show.
She recently partnered with DOLE to promote their delicious salad options and spread the word about the DOLE Salad Circle, an online community where you can swap recipes, receive exclusive money-saving offers, plan the ultimate salad dinner party and chat with noted food, cooking and party-planning experts. As a part of this initiative includes Salad’tude, an idea is asking salad lovers to take their passion for salad creation one step further ‘to the point of thinking of salad as an opportunity for personal extravagance and escape.
Inspired by her on-camera and real-life roles as a successful working mom, her passion for healthy eating and support for the hunger-relief organization Feeding America, Dole saw Felicity Huffman as ideally suited to encourage consumers to embrace their inner Salad’tude. The actress will star in a series of online and traditional ads that entice salad users to greater personal expression using Dole’s 38 salad blends and all-natural kits. She will work with Dole to host media events and appearances, as well as the ‘Show Your Salad’tude Sweepstakes,’ an online opportunity for one lucky participant to win a trip for five to Monterey, California, for the ultimate salad-indulgence experience including dining with Felicity Huffman.
At the luncheon, I loved listening to Felcity talk about everything from her favorite salad (recipe below) to life as a mom to her career. She sounded refreshingly “normal” – especially as she spoke so lovingly for her husband and actor, William H. Macy. She also remarked on how challenging it is to have girls and that she loves NY – but finds it too expensive.
While listening to Felicity I also loved soaking in the penthouse views of the Empire Hotel in NYC while enjoying a menu featuring the Ultimate Caesar Salad with Pesto Tofu, Grilled Steak Wraps, a delicious Empire Grilled Jumbo Shrimp & Shaved Summer Vegetable Salad and Felicity’s Can’t Get Enough Salad with Blackened Chicken – each of which were an amazing combination of different ingredients where you will never utter the words boring with salad again.
Can’t Get Enough Salad with Blackened Chicken
Featuring DOLE® Hearts of Romaine
Prep: 15 min. Cook: 10 min. Makes: 4 to 6 servings
- 1 pound chicken breast tenders
- 1/4 cup butter, melted
- Island Mix Blackening Seasoning (recipe below) or
- 2 tablespoons prepared blackening seasoning
- 1 pkg. (10 oz.) DOLE® Hearts of Romaine Salad
- 1 can (15 oz.) black beans, drained
- 1/2 cup sliced dried mango
- 1 avocado, peeled, cut into cubes
- 1/4 cup Lime Vinaigrette (recipe below)
- 1/4 cup toasted shredded coconut, garnish
Brush chicken tenders with melted butter to coat each side. Coat each side of chicken tenders with Island Mix Blackening Seasoning, to taste.
SautÃ© chicken tenders in nonstick skillet over medium-high heat, 7 to 10 minutes, or until chicken is no longer pink in center. Remove chicken from heat and cut into bite-size pieces.
Combine romaine hearts, black beans, mango, chicken and avocado in large salad bowl. Toss with Lime Vinaigrette to evenly coat.
Sprinkle with toasted shredded coconut, if desired.
Island Mix Blackening Seasoning: Stir together 2 teaspoons allspice, 1 teaspoon ground cayenne pepper, 1 teaspoon garlic salt with dried parsley, 1/2 teaspoon onion powder and 1/2 teaspoon fresh ground black pepper, until blended. .
Lime Vinaigrette: Whisk together 1/2 cup olive oil, 1 tablespoon lime juice, 1 tablespoon champagne vinegar, 1 teaspoon sugar, 1/2 teaspoon salt and grated peel of one lime in small bowl. Makes about 3/4 cup.
