On Christmas and New Year’s, one of our favorite family traditions is a yummy breakfast of sorts. A few years ago, my mom and I realized that neither of us wanted to be in the kitchen all Christmas morning, so we switched from a typical pancakes, eggs, and sausage style meal to breakfast casseroles and quiches that involved little prep work.
While looking for a new idea this year, I came across this recipe for an Apple Caramel French Toast Casserole from my friend Julie at Mommie Cooks. We met years ago when we were both living in Dallas, and her blog features amazing food ideas and photography, along with her three adorable little boys. I asked her if she’d allow me to share one of her recipes, and when she said yes, I knew exactly which one I wanted to use.
This French Toast casserole tastes amazing and it is prepped the day before, so one just has to wake up, turn on the oven and pop it in. It’s ideal for a holiday morning with a good cup of coffee with great company. Happy New Year’s and happy eating!
Apple Caramel French Toast Casserole
Ingredients:
1 Loaf Challah Bread, Sliced
2 Large Apples, Peeled and Chopped
10 Eggs
1/4 Cup Brown Sugar
/12 Cup Heavy Cream (can sub milk or half&half)
1/4 Cup Dulce de Leche
2 Tbsp Butter, Melted
1 tsp Vanilla
1 tsp Cinnamon
1/4 tsp Cardamom
1/4 tsp Salt
Directions:
Slice the challah and arrange it in an oven safe dish.
Sprinkle the chopped apples over the top of the bread.
In a separate bowl whisk together the eggs, brown sugar, cream, dulce, butter, vanilla, cinnamon, cardamom and salt.
Pour over the top, cover with foil and place in the fridge overnight.
Let the dish sit out and warm up for about a half hour before cooking.
Uncover and cook in a 350 degree oven for 25 minutes.
