We’ve got a great picnic recipe to share. Spring is in the air, and I’m dreaming of dining al fresco. This yummy sandwich recipe ditches traditional fattening spreads in favor or protein-packed Greek yogurt. ATHENOS Greek Yogurt is made the Greek way, simply, with respect for ingredients. What You Need:
1’?4 Cup ATHENOS Greek Nonfat Yogurt
2 Tbsp. pesto
1 Loaf (12 oz.) focaccia bread, cut horizontally in half
2 Small boneless skinless chicken breast halves (1/2 lb.), grilled, sliced
4 KRAFT Deli Fresh Provolone Cheese Slices
3’?4 Cup roasted red peppers
1 Jar (6 oz.) artichoke hearts, drained, thinly sliced
1 Cup mesclun salad greens
MIX Greek yogurt and pesto until well blended; spread onto cut surfaces of bread. COVER bottom half of bread with chicken, cheese, peppers, artichokes and greens; cover with top of bread. CUT into four wedges to serve.
This recipe can be made in advance (don’t assemble sandwiches until you get to your picnic site) and is sure to be a crowd pleaser.
