I cooked something new this week: Soft Shell Crab. I grew up in Maryland and used to catch these as a kid, but I never new how to make them. This week they were on sale for $6.50 per crab so I asked the seafood guy to give me a simple recipe and boy were these delicious.
Ingredients
Three Soft shell crabs
Egg-beat and place in flat bowl.
1/2 cup flour
Clean crabs by cutting off face, removing lungs and underbelly flap. Rinse and dry crabs. Dip crabs in flour on both sides. Heat a non-stick skillet on Medium-high. Place crabs in egg mixture-be sure to coat both sides. Place crabs in heated pan. Cook for about 5 minutes on each side. When done the crab will be a red-gold color and a bit crunchy on the edges. Enjoy with corn and a tomato salad.
