We’ve been eating like kings this vacation. Loads of seafood. I saved the claws and bodies from our New England lobster boil (we ate the tails with steamed clams and boiled red potatoes) a few days ago and today I whipped up lobster salad. Sadly, I forgot to snap a picture until the near end of lunch today. You’ll need the claws and bodies of at least three lobsters to make lunch for three.
Simply mix all the above ingredients in a large bowl. The traditional method is to serve the salad on a hot dog roll, but we go the healthier route and serve over mixed greens with sliced tomatoes. Yum!
